Dear husband - Day 13 (Tubby's birthday + Tiramisu cake recipe)


Dear husband, Happy birthday!




While you are not the best, most handsome, most intelligent, most capable person out there on this world, you are the greatest and most important man in my life (apart from my dad, of course!). Although you are unable to provide everything for me, you have provided the best that I need.

There ain't many people in this world that can get along well with anyone especially when we are human and we sin and we judge easily. You are one of the rare exceptions. While I sometimes struggle to find common ground with certain people, you always remind me to see the good in human and remember that we sin as well and we all need God's grace and forgiveness.

You are a great leader and yet you accept to be taught as well. You are a thinker and you are very wise. You take time to process things and think before you speak. You are very hardworking. You take up part time jobs just to earn more so you can give more; to church, to family or to society. Although I have complained a lot, of you not being around enough, you will always teach me to look not now, but future.

You truly are a blessing that God put in my life and I am uber privileged to be the one whom you chose to do life with. Although you were not everything that I 'dreamed' I wanted in a mate when we first met, you turned out to be so much more. It's really an honour to be your wifey and partner in life!

Let's continue to argue and learn to love each other! Grow our love together!

On his birthday, I decided to make tiramisu cake as his birthday cake. We didn't plan for anything special or fanciful. As boring as it sounds, we spent time together at home, watching movie and eating cake. What a relaxing quality time spent.

If you are a fan of tiramisu, try this simple recipe adapted from KitchenNostalgia.com. No baking is required for this recipe. This cake is best eaten chilled and it's creamy and decadent, perfect for any occasions.

Ingredients:
1) 240ml heavy whipping cream
2) 227g mascarpone cheese, room temperature
3) 3 tbsp brown sugar
4) 1 tsp vanilla extract
5) 1 tbsp rum or brandy (optional)
6) 1 and 1/2 cups espresso or any strong coffee at room temperature (sweetened if preferred)
7) 1 pack of lady fingers (such as this Savoiardi brand)
8) Cocoa powder for dusting the top

Steps:
1) Beat whipping cream, sugar and vanilla extract together until stiff peaks forms.


2) Stir in mascarpone cheese and rum/brandy until well combined.


3) Dip lady fingers in coffee (not soaked, otherwise will be very mushy and fall apart!!!) and place in pan to make the base (fully covered).








4) Spread half of the whipped cream mixture on top of first layer of lady fingers.
5) Repeat steps 3) and 4) for top layer.
6) Dust the top of tiramisu cake with cocoa powder using a sifter.
7) Refrigerate for at least 4 to 8 hours, best, overnight.
